Day and night Hat cake...
WARNING! NOT SUITABLE FOR DIET!
This time something sweet..
I named it after the shape I created. I was trying a new recipe. The healthiest thing on this recipe is the mint leaf in the pic!And I can confirm that it tastes better than it looks.๐ I know this doesn’t look extra special, nor decorative. I made it to test a special recipe.
No eggs and only takes 5 min to make. So simple, especially when you don’t have much time.
I mixed 1 & 1/2 cups of self raising flour, 4-5 tbs of natural yogurt (I like 0% fat), 1tsp of baking powder, vanilla essence, 1 cup of caster sugar, 100g of melted butter and a pinch of salt. The yogurt was activated almost immediately with baking powder, surprisingly it was rising really fast. While the cake was baking it almost doubled in size.
This mix went into a microwaveable dish. At the bottom of the dish I placed grease paper. This made it easier to take it out after baking. And there we go 5 min later the cake was baked. When it comes to microwaves, every type is different. Sometimes the cake will need a minute or 2 longer. I suggest to test the cake with a toothpick (when the cake is cooked the toothpick will come out dry).
The original idea for this cake was to make it vanilla flavoured. 200-250g unsalted Butter and around 100g-150g icing sugar. Well, after all I ended up making chocolate flavour. How did that happen?
Here is what happened. I was trying this recipe for the first time. As soon as I had all the ingredients mixed together I realised that there is more mix that my dish can take. So I separated them into two halves and put them on the top of each other. It ended up looking like a HAT!
While I was waiting the 5 mins for the first half to be baked, I looked around and had an idea to add 1&1/2 tbs of cocoa powder and more icing sugar to the second half.
And while this chocolate cake was in the microwave I decided to change the recipe for the icing. I added cocoa powder and more sugar than the original recipe.
In my family my mum and grandma were often making cakes at home. I learned from them to spread the jam before the icing. It fills little gaps and also gives you a bit of an acid fruit kick.
This time I decorated with grated coconut and icing sugar.
And now I give you one more advice . Before you put the icing on, cool the cake down in the fridge, this will prevent the icing from melting. Once the icing is on put the cake back into the fridge for a few hours. IF you TAKE it out and CUT it after only one and half hour like I did as I was so impatient๐ฌ
It sounds so simple, I might even have a go myself. On second thoughts, as I don't really eat cake; maybe not. It looks delicious!
