I did not figure out how not to spill the chocolate, but who would care about extra of the chocolaty goodness on this yumi cake??
Jaffa cake is many peoples favourite, so why not make it bigger?
Base - I made from my previous blog recipe ‘day and night hat cake.’ Jelly - I prepared the night before completing this lovely cake.
For the orange jelly I used 100% natural orange juice and 2 spoons of orange marmalade to enhance the flavour. I was not sure how it will work out at first, but it was just perfect and it tasted exactly like a mini Jaffa cake. :-)
Of course I had to make sure the base was cold when I put the jelly on otherwise it would melt.
Last thing is the chocolate. I melted a mix of milk and dark chocolate with a couple of spoons of coconut oil and poured it on top of the jelly, then straight into the fridge to cool down. Some people might like chocolate ganache (melted chocolate with cream). I went for the real thing and believe me I do not have any regrets!
The Jelly was so nice and soft, whilst the chocolate was playing so well with the cake. The chocolate which was on the jelly melted on the tongue.
Tip for cutting a cake with hard chocolate like this: make sure your knife is hot by dipping it in hot water and drying with a tissue before use. Bon appetit!
Very inventive!. I buy packets of mini Jaffa Cakes here; the Pear flavoured ones are superb. Isn't it too early for a birthday cake?
